Don’t worry too much about it. I eat food off the street everywhere. You are probably going to get sick. You’ll deal with it, recover, and have a resistance afterwards. This will mean that you can be even more fearless in eating later!
Life (and your time in Mexico) is too short to try to miss the best food because of fear you will get sick. Get sick right away and then enjoy wonderful food for the rest of your trip!
